  • 1/2 cup white beans, drained & rinsed
  • 1/2 cup peppers, diced
  • 1/4 cup onion, diced
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp plain nonfat Greek yogurt (to finish)
  • to taste fresh cilantro
  • to taste salt & pepper
  • to taste (optional) optional spices: cumin, garlic powder, smoked paprika
