  • 1 cup roasted sweet potato cubes
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained & rinsed
  • 2 cups spinach, chopped
  • to taste fresh cilantro + lime
  • to taste salt & pepper
  • to taste (optional) optional spices: smoked paprika, cumin, garlic powder
