Ingredients

  • 5.3 oz grilled chicken breast, sliced
  • 1/2 cup cooked brown rice
  • 1/2 cup black beans, drained & rinsed
  • 1 cup bell peppers + onions, sauteed
  • 2 cups romaine, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/3 medium avocado, sliced
  • 2 tbsp nonfat plain Greek yogurt
  • to taste fresh cilantro + lime juice
  • to taste salt & pepper
  • to taste (optional) optional spices: chili powder, cumin, paprika, garlic/onion powder

Instructions

  1. 01Layer rice and beans.
  2. 02Add chicken, peppers/onions, romaine, tomatoes, avocado.
  3. 03Top with yogurt, cilantro, lime, and seasonings.
