Ingredients

  • 1/2 cup cooked quinoa
  • 1/2 cup chickpeas, drained & rinsed
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 cups spinach, chopped
  • 2 tbsp hummus
  • 2 tbsp tzatziki
  • to taste lemon juice + parsley
  • to taste salt & pepper
  • to taste (optional) optional spices: oregano, basil, garlic powder, red pepper flakes
