Ingredients

  • 4.2 oz grilled chicken breast, sliced
  • 2 cups spinach + kale mix, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup chickpeas, drained & rinsed
  • 2 tbsp Kalamata olives, sliced
  • 2 tbsp plain nonfat Greek yogurt
  • 2 tsp tahini
  • 1 tbsp slivered almonds or walnuts
  • to taste fresh parsley and greek seasoning, lemon, salt & pepper

Instructions

  1. 01Mix greens, tomatoes, cucumber, chickpeas.
  2. 02Top with chicken and olives.
  3. 03Whisk yogurt, tahini, lemon, parsley; drizzle.
  4. 04Sprinkle nuts.
