Ingredients
- 4.2 oz grilled chicken breast, sliced
- 2 cups spinach + kale mix, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup chickpeas, drained & rinsed
- 2 tbsp Kalamata olives, sliced
- 2 tbsp plain nonfat Greek yogurt
- 2 tsp tahini
- 1 tbsp slivered almonds or walnuts
- to taste fresh parsley and greek seasoning, lemon, salt & pepper
Instructions
- 01Mix greens, tomatoes, cucumber, chickpeas.
- 02Top with chicken and olives.
- 03Whisk yogurt, tahini, lemon, parsley; drizzle.
- 04Sprinkle nuts.
